The most distinctive cup on the table. This Grade 1 lot from Debaye, Guji, is processed with extended anaerobic fermentation — a slow, oxygen-free method that concentrates the fruit into something winey, tropical, and unmistakably intense. Not a subtle coffee; a memorable one.
Cupped blind at the DMCC Coffee Centre. Limited quantity; when the lot is gone, it's gone.
Best for: Espresso, or a bold pour-over taken black — no milk, nothing in the way. For the adventurous palate, and for pouring when you want a guest to remember the cup.
When to pour: The slow afternoon. Treat it like a digestif — after lunch or dinner, one deliberate cup. This is not the 5 a.m. report coffee; it deserves your attention.
